Easy French Toast

Sunday morning a Facebook friend mentioned she made French toast for her family.  I haven't made French toast in ages and it sounded like a good idea to me!

Earlier in the week I attempted to make some oatmeal bread in the bread machine.  I didn't have a few of the ingredients and it didn't come out really good, just kinda okay.  I wondered if I could revive that bread.



I didn't have a recipe, just put together:

1/2 can sweetened condensed milk
4 eggs
1 cup milk

I blended it all together and then soaked the slices of oatmeal bread in it for a bit, and then browned them on both sides in a medium hot skillet with a bit of canola oil.



To go with it, I did some bakin' bacon.  It turned out great!



It did revive the bland oatmeal bread.  It was sweet enough to eat plain.  I'll definitely make it this way again!

Repost: Island Rice

Spring is here and this makes a quick, light meal.

Island Rice


I had about 1 1/2 cups of brown rice sitting in my fridge and a boneless, skinless chicken breast that had been cooked in the crock pot.

I looked in my cupboard searching for a new way to put chicken and rice together and here's what I did--measurements are approximate:

Pamm's Island Rice

1 1/2 cups cooked brown rice
1 cooked chicken breast, cut into bite-sized pieces
1 can tropical fruit salad, drained
2 tbs. lime juice
1 tbs. olive oil
salt & pepper to taste
1 tsp. onion powder
1 tsp. dried basil

Toss and chill.

It made enough for two meals for me. I ate it cold. It makes a delicious and easy grab-and-go meal.

Chicken and Biscuits

The biscuits in this reminds me more of dumplings and are oh so good.

You can use canned biscuits for this, but I didn't have any so I make a quick recipe of baking powder biscuits.


1/2 cup shortening
2 cups flour
1 tablespoon sugar
1 teaspoon salt
3 teaspoons baking powder
3/4 cup milk

Mix all but milk until well blended.  Add milk.  Turn out on floured surface and knead 8 or 10 times.  Roll out and cut with biscuit cutter into 12 biscuits.  Do not bake them.




For the rest of this recipe you will need:
1 pound chicken, cooked, deboned, and chopped
1/4 cup butter
1 can chicken broth
1 teaspoon black pepper
2 teaspoons paprika


In a large skillet, melt butter; add broth, chicken, and pepper.  Cook over medium-high heat for five minutes until bubbly.

Cover mixture with uncooked biscuits.  Cover, reduce heat, and simmer for ten minutes.

Uncover, sprinkle with paprika and cook for five to ten minutes more.


Serve hot.  I divided this up into four portions, put in labeled Ziploc containers and into the freezer.


You can defrost in the refrigerator, then heat in the microwave or I will reheat mine in a mini crock pot.

Repost: Crock Pot Cereal Mix

I am thinking about making this soon, there's a sale on Chex Cereals this week:


I love dry cereal! I love, love, love cereal mix. I also love my crock pot.

When Chex cereals go on sale this time of year, I get some and make a mix in my crock pot. Here's what I did this time; each time it seems to come out different, using what ever I have on-hand.


1/2 box each of Corn, Rice, and Wheat Chex
1/2 box of cheese crackers (I used the store version of Cheese Nips)
1/2 bag of mini pretzel twists.
1 stick butter
2 T. Worcestershire sauce
2 tsp. seasoning salt
1 tsp. onion powder
1 tsp. garlic powder

In large crock pot, dump cereal, crackers and pretzels.

In a small bowl, melt butter in microwave. Add Worcestershire sauce and spices; stir well. Pour over dry ingredients and toss to coat.

Cook with the lid off on high for two hours, tossing every half hour. Turn to low for two more hours, tossing every half hour.

Store in an air-tight container.
