Taco Muffins

I have made Taco Cups before.  I wanted to make them again, but try it this time with tortillas.  I was wondering if the tortillas would hold-up?

I didn't have enough flour tortillas and wanted to test both flour and corn anyway, so I cut several tortillas (both corn and flour) into fourths.

I didn't have any taco seasoning on hand so I browned the ground beef with about 1 to 2 tablespoons of each:  minced garlic, minced onion, celery salt, garlic powder, onion powder, and seasoned salt.  I browned the meat, then drained.

Meanwhile, I sprayed the muffin cups with cooking spray then put 1/4 a flour tortilla piece into each cup and put two of the 1/4 corn tortilla pieces in each cup.  I put a sprinkle of cheese in each cup, then two tablespoons of meat, then more cheese on top.

Bake in a 350 degree oven for 20 minutes.  Cool, then remove from muffin pan.


Both the corn and the flour tortilla versions are delicious!  They "held together" very well!

I had contemplated cutting large circles out of the tortillas to "fit" each muffin cup, but am glad I went with the rugged triangle shape (a lot less work).

Besides the three I had for lunch along with a salad, I put them in labeled baggies in meal sized portions.  I will either crock pot them to defrost and heat or use the microwave.  I will definitely make them again!

Rich Sandwich

I wanted a sandwich,  but something different.

I cut the croissant in half, spread it with cream cheese and put slices of turkey on it.


I didn't have any lettuce, but that would have been awesome on this sandwich.

It was a nice change of pace and tasted very rich.  I don't think I would eat this everyday, but it was a nice treat!

Italian Meatballs

I don't think I ever make the same meatball twice.  Here's what I did this time:


2 pounds ground beef
1 cup crushed wheat saltines
1 tablespoon garlic powder
1 tablespoon onion powder
1 can tomato sauce
1 egg
1 package Italian dressing mix
1/2 cup water

Mix everything together (with your hands works best).  I use my cookie scoop to drop meatballs into the pan.  It makes them all around the same size.


Bake at 375 for 30 minutes.

I gave a few to my "taster" and he said "They have a melt in your mouth quality to them!"

I bagged them up in meal-size portions, labeled them, and put them into the freezer.  On the day I want to serve them, I'll put them straight from the freezer into my mini crock pot first thing in the morning and they'll be defrosted and heated through by lunch time.

Awesome French Toast

This French toast turned out the best I ever made!  I don't know if it's what I mixed up, the bread I used, how I cooked it or what, but YUM!

1 loaf thick sliced French bread
1 can sweetened condensed milk
2 tablespoons vanilla
8 eggs, beaten
2 cups milk
2 tablespoons cinnamon

Whisk together everything but the bread.  Dip each slice of bread in the mixture, cook on oiled pan over medium heat until browned on one side, flip and cook on the other side.


I had a side of bacon.  I put a pat of butter on the toast and that's all it needed, it was just sweet enough to not need syrup or powdered sugar.


I'm glad I made a big batch and froze them.  I bet they don't last long, though.

Cheesy Bacon Bread

What can you do with the end of a loaf of sour dough bread, a handful of shredded cheddar cheese, and a few strips of bacon?  (That's the ingredients I had in my refrigerator over the weekend.)  Make Cheesy Bacon Bread!

I put the bread on the toaster oven tray and spread a little Miracle Whip on each slice.  I then put a sprinkle of shredded cheese over each, then topped with bacon strips.

I broiled it for about 4 or 6 minutes, until the cheese was melted.

It's very yummy and one of my favorite ways to use up a few strips of bacon.

Grilled Pizza Reheat

A while back I made some pizzas on pita bread.  I wondered what it would be like to reheat it on the indoor grill.


It came out very nice!  The topping was bubbly and the pita was crispy.  And, everything tastes better with grill marks ;).

Tropical Chicken and Couscous

When I found 3 rotisserie chickens reduced to 99 cents each, I grabbed them all and my wheels started spinning on what I could make with them.  This dish came to mind first.

2 boxes plain couscous
1 can vegetable broth
2 cans tropical fruit
1 rotisserie chicken, deboned and skinned

Cook the couscous according to the package directions using vegetable broth as part of the liquid and water making up the rest of the liquid.

Mix the couscous with tropical fruit (and juice) and the chicken.  Toss.

I put a meal's worth in labeled freezer containers and put them into the freezer.

On the day I want to have this for a meal, I'll defrost and either have this cold or warm in the microwave.  It's great both ways!

The other two chickens, I deboned and put the meat in the freezer until I can think of something else to make.
