I'm always on the lookout for recipes that add nutrients to toddler snacks. I found this recipe in an Eat Smart child care hand-out via an online friend (thanks, Wendy!).
Apple Cheese Biscuits
1/2 cup Sugar, granulated
1/2 teaspoon Cinnamon
1 3/4 cups Bisquick
1/2 Cheddar cheese, shredded
1 Apple, peeled, cored and finely chopped
1/3 Water
1/4 Margarine, melted
1. Combine sugar and cinnamon. Set aside.
2. In a mixing bowl, combine biscuit mix,
cheese and apple. Make a well in the
center of this mixture.
3. Add water all at once. Stir just until
mixture forms a ball.
4. Divide into 12 or 24 pieces, according
to servings in recipe. Shape each piece
into a ball.
5. Roll each ball in melted margarine, then
in sugar mixture.
6. Arrange in a single layer in two greased
9” round baking pans.
7. Bake in a 400 degree oven for 25-30
minutes or until golden brown.
8. Remove from pan; serve warm.
I followed the recipe, sort of, making some adjustments. I did not do any of the sugar, cinnamon, and butter. I'm trying to reduce sugar where I can.
I dropped them, using my ice cream scoop onto greased pans.
They came out wonderful! I couldn't taste the apple, but it tasted like a wonderful cheese biscuit.
The toddlers won't even know about the extra nutrients of the apple or that they're suppose to have sugar and cinnamon on them.
