Ten Pounds of Potatoes - Part 1

A ten-pound bag of potatoes is cheap! I bought a bag on a whim, not really having a plan, but knowing I could do something with it.

The first thing I did was diced potatoes. I serve toddlers a lot so, so I have to peel them due to chocking concerns. I also diced them smaller than I would have if I were serving adults or a family.

I diced about three pounds of peeled potatoes and put them in a baking pan sprayed with cooking spray. I sprinkled on minced garlic, minced onions, garlic powder, onion powder, and drizzled a bit of olive oil over the whole thing.



I tossed lightly and baked in a 450 degree oven until the potatoes are tender and beginning to brown, about 20-25 minutes.

I let them cool, served some to the toddlers (they loved them!) and had some myself (very yummy). I put the rest in meal-sized portions in Ziploc containers and in the freezer. I will put the in a mini crock pot to reheat. They could be defrosted overnight then zapped in the microwave or reheated in an oven.

You left us with a cliffhanger! I think those cubed potatoes sound delicious. I'd not have thought of a mini crockpot to reheat. Great tip!

I love making potatoes!! My favorite is the baked potato... can't wait to hear what you did with the rest of them.
