Leftover Mixup: Reviving a Chinese Dinner

On shopping night, I got a supermarket Chinese dinner. I ate a little of it when I got home, then put it in the fridge.

The next day, I thought it would make a great lunch. Usually, the rice dries out and I wanted to try something to moisten it up. I then remembered some juice from a can of Mandarin oranges I saved. I didn't know what I'd use it for, but something told me to save it. I bet it would taste great with my orange chicken and rice.

In my mini crock pot, I put the rice in, the chicken, then the frozen juice on top. I put the lid on and put it on high for a couple of hours.

It turned out great! Adding a pat of butter to the rice was delightful! Usually, when I reheat it, the rice is really dry and I try hydrating it after I heat it up. Pre-hydrating (lol) worked great!

Leftovers rock! I almost always make enough one night to create several different meals from over the next couple days - sometimes the leftovers meals are better than the first time around :-)

Great idea! I need to consider saving the juice from the cans of fruit like that, if we don't end up drinking it all.
