Turkey Meatloaf Muffins

I can't pass up a good sale. Ground turkey was on sale a few weeks ago and I stocked up.

What a great opportunity to make some Meatloaf Muffins. I modified the Weight Watcher's recipe to what I had on-hand.

3 pounds ground turkey
2 boxes Stove Top stuffing (I had store brand and used that)
1 egg


Mix all ingredients together.



Scoop into muffin tins. I used my ice cream scoop and it turned out like giant meatballs. Bake at 350 degrees for 35 minutes.



I like to make a whole bunch, stick 2 or 3 into snack-size baggies and put in the freezer. They make easy lunches or suppers for me--popping them straight from the freezer into my mini crock pot first thing in the morning (or early afternoon) and by lunch (or supper) it's defrosted and heated through. The same thing would work for a family, just package in family-sized meals.

Sometimes I make them with hamburger and sometimes make them for the toddlers, packaging them in toddler-sized meals.

I love this idea. All of it. From using ground turkey to using stuffing mix and putting them in muffin tins,... well, you get the message. I am making these!
