Oatmeal Eggs?

While searching for high protein breakfast ideas, I came across this Eggs-N-Oats recipe. Since the toddlers like the Spaghetti Eggs and Rice Eggs, I thought I would give this a try.


I made it just the same as I would with spaghetti or rice.....melted a pat of butter in a skillet, added 3 eggs and about a half cup of oatmeal and scramble it up......


In reading the recipe it suggests to flavor using either a spicy or sweet route. I added a bit of cinnamon and a splash of vanilla.

When it was done, I sprayed a mini crock pot insert with with cooking spray and put all this in there and put in the fridge.


This morning I popped the crock pot insert into the base and heated for about 2 hours. It was perfect by lunch time.

I served it to the toddlers and to my surprise, they really didn't like it. They usually eat just about everything put in front of them, but even my biggest eater just picked at it.

So, it was a good try, but I won't be making it again.
