I find it odd that I can't find a good bread machine banana bread recipe. I thought that would be a common thing. I suppose I could use my old-stand-by Kitchen Aid recipe and skip the bread machine but something keeps me on the search. It must be the idea of putting everything in the bread machine and having it mix and cook and turn off without me having to do anything. So I went searching and read a lot of this and that and then put bits and pieces of different recipes together and tried this recipe for 1 1/2 pound loaf.....
1/2 cup applesauce
1/4 cup vegetable oil
1/4 cup plain yogurt
3 ripe bananas
2 1/2 cup flour
1 1/4 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
I put it all in the machine and used the Quick Bread setting.
When I make banana bread the traditional way, I dice up the bananas and the Kitchen Aid finishes the smashing for me. I did the same with this recipe and this is what happened:
It didn't mix well! The bananas stayed chunky.
BUT--this is a super moist bread, just sticky. It's the best banana bread I've tasted so far.
I think I will try this recipe the next time I have three mushy bananas, but next time I'll completely mash all the bananas.

I've only tried banana bread once in my BM, and I wound up with a loaf that looked fine on the outside but was a goopy mess inside. DH and I ate it with spoons, like warm bread pudding, and it was delicious, just not baked through. If I find "the" recipe I'll let you know!
