Chicken and Biscuits

The biscuits in this reminds me more of dumplings and are oh so good.

You can use canned biscuits for this, but I didn't have any so I make a quick recipe of baking powder biscuits.


1/2 cup shortening
2 cups flour
1 tablespoon sugar
1 teaspoon salt
3 teaspoons baking powder
3/4 cup milk

Mix all but milk until well blended.  Add milk.  Turn out on floured surface and knead 8 or 10 times.  Roll out and cut with biscuit cutter into 12 biscuits.  Do not bake them.




For the rest of this recipe you will need:
1 pound chicken, cooked, deboned, and chopped
1/4 cup butter
1 can chicken broth
1 teaspoon black pepper
2 teaspoons paprika


In a large skillet, melt butter; add broth, chicken, and pepper.  Cook over medium-high heat for five minutes until bubbly.

Cover mixture with uncooked biscuits.  Cover, reduce heat, and simmer for ten minutes.

Uncover, sprinkle with paprika and cook for five to ten minutes more.


Serve hot.  I divided this up into four portions, put in labeled Ziploc containers and into the freezer.


You can defrost in the refrigerator, then heat in the microwave or I will reheat mine in a mini crock pot.
