Ten Pounds of Potatoes--Part 2

On a whim, I bought a 10-pound bag of potatoes. With about a third of it, I baked some season, diced potatoes to serve as a side to the toddler (and me!).

My hubby made some steak fries with some of the potatoes. I didn't get any photos of that, but he just cut them in wedges, drizzled some olive oil on them, and baked them until tender.

With the rest of the bag, my guess was just over 5 pounds left, I peeled and made into mashed potatoes. I gave my new, all-in-one slow cooker a try (got it for a bargain off eBay). It boils, bakes, fries, slow cooks, steams, and just about everything else! I diced the potatoes and boiled them in water just like you would on the stove, until tender.

I drained the potatoes and added them to my Kitchen Aid with a package of cream cheese (I needed to use up) and a stick of butter and enough milk to get the texture I was looking for.


I divided up the mashed potatoes into meal-sized portions in Ziploc containers, labeled and put in the freezer.....

Except for the bowl I had to eat right away! YUM!

How is this a crock pot recipe? Well, to use my frozen mashed potatoes, I will pop out of the container and toss in my mini crock pot to defrost and warm.
