Quick Bread

Something that is NEVER seen in our house--a beer. Hubby got it to make beer-battered fish, which was quite good, then there was left-overs. I remembered a recipe I saw on the Food Network:

Quick Fix Beer Bread

Ingredients

  • Cooking spray
  • 2 1/4 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 12 ounces lager beer
  • 2 tablespoons olive oil

Directions

Preheat oven to 400 degrees F. Coat an 8-inch loaf pan with cooking spray.

In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Make a well in the center. Pour in beer and olive oil and mix until just blended. Pour batter into prepared loaf pan and bake 45 minutes, until golden brown.

I followed the directions and it was quick and easy.

It tasted a little like sough dough bread. I think it had to do with the type of ale beer I used.
If we ever have a beer to use up again, I would make it again. We ate some and I put some in the freezer for later.

This sound wonderfully savory. I made Guinness bread last St. Pat's...it was sweet and cake-like. Thanks for the recipe!
