One of my tricks for getting quick cooked, chopped chicken is to buy a rotisserie chicken and de-bone it. Sometimes I use it all up at once and sometimes I put the de-boned chicken into baggies and into the freezer for later.

I use rotisserie chicken lots especially when I am pressed for time. Generally, it's no more expensive than a fresh chicken from the meat market. We are away on a little mini vacation this week:) Come join me for Crock Pot Wednesday next week. I'd love to see you there.
