Tropical Chicken and Couscous

When I found 3 rotisserie chickens reduced to 99 cents each, I grabbed them all and my wheels started spinning on what I could make with them.  This dish came to mind first.

2 boxes plain couscous
1 can vegetable broth
2 cans tropical fruit
1 rotisserie chicken, deboned and skinned

Cook the couscous according to the package directions using vegetable broth as part of the liquid and water making up the rest of the liquid.

Mix the couscous with tropical fruit (and juice) and the chicken.  Toss.

I put a meal's worth in labeled freezer containers and put them into the freezer.

On the day I want to have this for a meal, I'll defrost and either have this cold or warm in the microwave.  It's great both ways!

The other two chickens, I deboned and put the meat in the freezer until I can think of something else to make.
