Chicken 'N Biscuits

This is one of my most favorite recipes ever! I make it when I need comfort food. It reminds me of my mom's chicken 'n dumplings, but it's much easier to make!

Chicken 'N Biscuits

1 sick of butter
1 can of chicken broth
1 1/2 to 2 cups cooked, chopped chicken (I use leftovers)
1 tsp. pepper
1 tube refrigerator biscuits (or one recipe biscuit dough)

In a skillet (with a lid), melt the stick of butter. Add the can of chicken broth, pepper, and cooked chicken. Heat over medium-high heat until bubbly.

I made a batch of biscuit dough using a baking mix for this time. I wanted small bites and used the "hole" cutter of my doughnut/biscuit cutter to make small biscuits. I have made this recipe with refrigerator biscuits and regular sized homemade biscuits.....it always comes out yummy! If you're making the homemade version, make the biscuits first before you begin with the butter and broth.

When the chicken mixture bubbles, gently drop in the biscuits. It may be crowded, but keep squishing them in. Reduce heat to medium-low, cover and simmer for 10 minutes. Uncover and simmer for 10 minutes more. Remove from heat & serve.

This will be almost soup-like. It's definitely comfort food and yummy served on a cloudy day (at least it always makes me feel better on a cloudy day!)

I have frozen and thawed & reheated successfully. I usually use my mini crock pot to reheat, but will use the microwave, too.

My husband would love this! I have only made chicken and dumplins once, and it was too much work. I think I could handle this. Thanks for sharing!

This is interesting and I think my son would love this. I just have a question. Do you bake the biscuits before you put them in the soup/butter mixture or do they cook in the mixture?

No, you don't bake the biscuits. It turns out like dumplings.

Definitely sounds like a quick and easy comfort food meal and great for a meal on a cold day. Thanks :-)
