One of my favorite Food Network shows is Quick Fix Meals. She has a wonderful recipe for Maple-Orange Chicken with Acorn Squash and Sweet Potatoes.
I didn't know what hoisin sauce was, so I looked for a recipe and found this one.
I decided to stray a bit from the original recipe and put the two together to make this:
1/4 cup orange juice concentrate
1 cup chicken broth
2 tablespoons maple syrup
4 tablespoons soy sauce
1 heaping tablespoon peanut butter
1 tablespoon molasses
2 teaspoons white vinegar
1 teaspoon minced garlic
1 teaspoon pepper
(I don't like spicy things so I left out the hot sauce part, but you could add 20 drops of Chinese hot sauce if you like). Mix together and set aside.
Layer in slow cooker:
1 small to medium acorn squash peeled, seeded, and chopped into 2" pieces.
2 sweet potatoes peeled and cut into 2" pieces.
5 chicken breasts (with or without bones), seasoned all over with salt and pepper. (I used thighs)
Pour sauce over all. Cook on high 3 to 4 hours or low 6 to 8 hours.
Since I am the only one eating this dish, I made this into four separate portions; three in containers to toss in the freezer (before I cooked it)......
