Cheap Chicken

Grocery shopping this weekend, I found a great sale on a rotisserie chicken!


It wasn't on my list, but I couldn't resist the sale.

When I got home, I decided to use my new 12 cup rice cooker (purchased for $6 at a thrift store!) to make a huge batch of Rice Cooker Fried Rice.


5 (rice cooker cups) of brown rice
2 cans chicken broth plus enough water to fill to the "5" line on the rice cooker
1/2 cup soy sauce
2 T. garlic powder
2 T. minced onions
3/4 of the rotisserie chicken, deboned


Mix all ingedriends in the rice cooker, cover, and turn on "cook".  It took about 45 minutes to cook.

When it was done I had enough for 8 meals for either me or the toddlers.  I put them all into the freezer.


With the remaining 1/4 chicken, I made Italian Chicken and Noodles.


I cooked about 1/3 of a pound of macaroni (whatever was left in the box), and drained.  I added it to the chicken with Italian dressing and Parmesan cheese.

I put two helpings away in the freezer and I had one.


It had been too long since I've had this.  It is very yummy!
