I have a favorite Fried Rice Recipe, but I wanted to try something new. Here's what I threw together:
Orange - Teriyaki Fried Rice
1 to 2 cooked boneless, skinless chicken breast, shredded2 Tbs. minced ginger
1 Tbs. minced onion
1 Tbs. minced garlic
Dash of pepper
1/4 cup teriyaki sauce
1/2 cup orange juice
1 to 2 Tbs. olive oil
2 eggs, beaten
2 cups cooked rice
When I need rice, I cook up a whole batch in my rice cooker. I cooked the batch of rice first. I used about 2 cups for this recipe and put the rest in containers into the freezer for the next recipe I will need it for.
In a small bowl, mix the first seven ingredients.
Put the olive oil in a frying pan. Cook the eggs in the oil until scrambled. Add rice and chicken mixture.
Heat and stir until warmed through. This made three meals for me. I put one serving in a bowl and two servings in Ziploc bowls, put lids on them, labeled and put them in the freezer. They will make great lunches--reheating in my mini crock pot.
Update--I did pop one of the little dishes into my mini crock pot for a few hours to heat up for a supper. It was more yummy than the day I ate it fresh as all the flavors had combined.

Thanks for sharing your delicious looking recipe with us! And the idea of freezing some for later. I love to cook in quantity and freeze for future use! It comes in handy for those extra busy days! :)
Oh yum, this looks like a great twist on fried rice, I love orange flavored chicken. And I second the comment on freezing extras for later, its so handy to have something ready to go in the freezer when life gets busy!
