Muffin Meals

I love to make muffins.  I like to add more nutrients to them and the children hardly notice.  They are easy to freeze and reheat and I can easily choose as many as I need for a day, depending on the child care attendance.  It came in handy this week when I had low attendance due to vacations and parents' schedule changes.  It was easy to grab just one or two muffins, rather than the whole package of six or eight that usually feeds my group.

Cupcake Cones

I've been really good about limiting sweets, but every now and then I get a craving for something sweet.  My latest one was for cupcakes made in flat-bottom cones.

Follow the directions on the cake mix, then put the batter into cones.


Bake at the temperature and time the cake box suggests for cupcakes.

Very yummy and easy!  I didn't frost them--just wanted to taste a bit of cake.  It was enough to calm my sweet tooth.

They are fun to decorate at birthday parties.  Kids love them.  It makes simple cupcakes seem more special.

Turkey Taco Meatballs

Meatballs are easy to freeze, fix, and serve to my toddlers.  I like to try new ways to flavor them.

2 pounds ground turkey
1 sleeve wheat crackers, crushed
1 Tablespoon chopped onions
1 package taco seasoning mix
1 small can tomato sauce
1 Tablespoon seasoned salt
1 egg, beaten

Mix all ingredients well.  Make into meatballs.  Bake at 350 degrees for a half hour.  Serve or freeze.

Without telling my taste tester how I made them, he took a bite and said, "it tastes like a taco."  Just exactly what I was going for :)

Toddler Noodles

This wasn't the first time I tried serving the toddlers plain noodles.  The first time was about a year ago and I chose some whole wheat pasta in a much larger shape.  They ended up almost choking on it, so I took noodles off my menus.

I wanted to try it again, but this time with a different shape and with regular pasta.

I boiled up some Ditalini according to the package directions.  I then divided it up into meal-sized portions and added a pat of butter to each, then put it in the freezer.

On meal day.  I take pop one out into a mini crock pot first thing in the morning, stir a couple of times, and it's defrosted and heated through by lunch.

The toddlers can handle the shape and texture so much better.  They love it plain and ask for more!

Simple Meatballs

Simple is good.  I made these simple meatballs and they are a big hit!

1 pound ground beef
1 packet onion soup mix
1/2 sleeve saltine crackers, crushed
1 egg
1-2 Tablespoons Worcestershire sauce


Mix all ingredients; make into meatballs (I use a cookie scoop to make them all about the same size).

Bake at 350 for a half hour.  Serve or freeze.

Time to Make Lotion Again

It's a good thing I only have to make lotion about every six months.  It's so messy, but oh, so worth it!

Here's the original recipe I found a few years ago:  My Fancy Lotion Recipe


This time I mixed up Wal-Mart's brand Aveno lotion, two small tubs Vitamin E cream, petroleum jelly, and a tube of A & D ointment.


Put it into a bowl and mix it up.


It fit in all the containers pictured below.  Two of those containers I had from before.


I should be set for another six months!  I wrote about why I mix this up and how I use it here.
