Big Weekend Cooking

With the long weekend, I have been anticipating a big cooking day.  My freezer is full again, praise God!

I deboned 3 chickens!
I found 3 for 99 cents each!



Cookies
I got the roll of dough you cut and bake.  I wanted to make it easy on myself because I knew I was having a big day.

Grilled Chicken Taco

I wanted to try something different, a grilled chicken taco.

I deboned a cheap rotisserie chicken and put half of it away for later and used half of it.  I browned  the chicken in a little oil over the stove with dashes of garlic powder, onion powder and seasoned salt.

I put the fried, drained chicken into four tortillas and added a handful of shredded cheese on each one.  I then folded them all up and sprayed the outsides with cooking spray, then . . .

I put them on my indoor grill and cooked them like a panini.  It melted the cheese and sealed them up.

I had one for dinner and it was yummy!  A salad completed the meal.

I put the other ones in the freezer and plan to defrost then microwave to heat them up.

I will make this again!

Tastes Better With Grill Marks

Have you noticed that everything tastes so much better with grill marks?



Sometimes for lunch I like to have a turkey-dog.  To make them taste “better”, I decided to put grill marks on them before I put them in the freezer for lunches.

I used our indoor grill, got it heated up, and put the turkey-dogs on them.

I turned the dogs until they had marks on all sides.

I then put two in a baggie (these are the very small hot dogs) and into the freezer for lunches.  On the day I want to have them for lunch, I’ll take them straight from the freezer and put them in my mini crock pot first thing in the morning.  By lunchtime, they’ll be defrosted and heated through and perfectly roasted….and with grill marks on them Smile

Easy Split Peas

I had some dry green split peas.  Wanting to keep things simple, I decided to cook them in our Multi Cooker.

I put the two cups of dried peas, a can of chicken broth with enough water to make 5 cups liquid, a dash of lemon juice, and dashes of salt and pepper.


Following the instructions in the Bistro cookbook, I put it on the steam setting as described, then let it stay on warm for the allotted time.


They came out cooked and just right!  I got 4 toddler-sized portions and 1 husband-sized portion.


I put them in the freezer for the toddlers and will re-heat on the day I serve them.

If I didn't use the Multi-Cooker, I would have soaked them overnight, then mixed all that up in my slow cooker and cooked them on low all day.
